The Perks of Beind Unemployed and Living at Home




Haha...who would've thought there were any (perks). But there are. First of all I have my family to cook for, two parents and three brothers living at home means I eat a lot less of what I make. I have a kitchen with a KitchenAid, cake pans, cookie sheets, flour, spatulas, sugar, and more to work with. That mean no getting through half a recipe and realizing I have to walk all the way to Shaws just to pick up something that I know I would have had if I was still living at home. It is nice. As for being unemployed...I have all the time in the world to bake and make. Although I have no money, I do live at home so I have no rent to pay and best of all...I have a MOM!!! Which is better than a bank. So today I decided to go easy on the bank of mom and figure something out with what I had at home.



They say if life hands you lemons, make lemonade. I say if life hands you lemons, make lemon curd! Lemon curd is a dream come true. The funny thing is, up until...I worked at Flour Bakery+Cafe I had no idea what the stuff was. I had no idea that my favorite cheesecake in the whole entire world, lemon cheesecake, was made with lemon curd! So what I did today was recreate the tart I made Monday. But I replaced the apples with a layer of lemon curd. The recipe for the lemon curd can be found on one of my new favorite resources Joy of Baking.



The final product, was good. I think I should have thinned out the crust on the bottom, and made a higher crust around the tart. The tart could have also stayed in the oven a little longer, but I will remember that next time.



Personally I enjoyed the lemon curd cream cheese tart more than the apple, but my family didn't seem to matter either way, as long as they got their dessert.

Oh, how I would love to be unemployed and just be able to stay home and cook! I'm jealous!!

Your family is lucky that you use your unemployed time to bake for them and not just watch game shows and reality TV. I LOVE lemon curd, so this tart is a winner in my book.
